Oh My Squash!

Baked Acorn Squash with Brown Sugar

This is one of my favorite things in life. I ate it for lunch today. Here’s what you need:

  • Acorn Squash
  • 2 tbs Butter
  • 2 tbs brown sugar

I cooked this in my Nu-Wave oven. Yes, that is the infomercial microwave oven. Yes, it totally works. Here’s what you do:

  1. Cut the squash in half with a BIG BIG knife.
  2. Clean out the stringy stuff and the seeds.
  3. Butter the inside of the squash all over.
  4. Now whatever your cooking method, cook the squash halves for half of the time face down, then flip them over, fill them with the rest of the butter and cover then in the Brown Sugar, and finish cooking them.
  5. EAT EAT EAT
